A chicken lollipop is essentially a frenched chicken winglet, wherein the meat is cut loose from the bone end and pushed down, creating a lollipop appearance. Chicken lollipops are crispy & dry, while drums of heaven involve further cooking of lollipops and flavoring them with an Indo-Chinese spice mix. It usually results in a semi-dry gravy.
