Authentic Indian Plain chai, or Masala chai, is made with water, milk, sugar, black tea, and spices, usually consisting of cardamom, cinnamon, ginger, and fennel. It is an infusion of a robust black tea simmered along with milk, sugar/honey, and sometimes spices.
